Dairy free eating is not as hard as many of you think ( read my previous post ) and substituting milk is very easy. Almond milk is my Favourite ! It is high in energy, proteins, lipids and fiber. It contains minerals like calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc. The other nutrients available in this milk include vitamins such as vitamin C, vitamin B6, thiamine, riboflavin, niacin, folate and vitamin E.

Here’s how you can make your own almond milk ( same instructions for any other nut or seed milk) which you can enjoy in smoothies , coffee , porridge , Chia seed pudding,cooking .

1.Soak the almonds overnight

2.Drain and rinse the almonds.

3.Combine the almonds and water in a blender ( start with a ratio of 1 cup almonds to 2 cups water when making almond milk. This makes a milk that is roughly the consistency of 2% milk. If you’d like a thinner milk, use more water next time; for thicker milk, use less)

4.Blend at the highest speed for 2 minutes. You can add vanilla , cinnamon,dates , honey if you’d like extra sweetness & flavor .
Strain the almonds.

5.Press all the almond milk from the almond pulp. Keep the almond pulp as you can prepare lots of delicious and nutritious things with it! You can dry it Andy make meal/flour of it, use it in smoothies, make cheese,flour,cookies, power balls, hummus…. recipes to come 😉).

Homemade almond milk only lasts a few days in the fridge, so make just what you think you will drink in this time period.
